Pineapple Custard Pie

Ingredients

  • 3/4 cup sugar
  • 2 tablespoons corn starch
  • 1/8 teaspoon salt
  • 1 cup milk
  • 3 eggs
  • 2 cans crushed pineapple
  • Whip cream

Ingredients for double amount

  • 1 1/2 or 2/3 cup sugar
  • 6 tablespoons corn starch
  • 1/8 teaspoon salt
  • 2 cup milk
  • 6 eggs
  • 4 cans crushed pineapple
  • Whip cream

Ingredients for a large and a small pie

  • 1 cup sugar
  • 4 tablespoons corn starch
  • 1/4 teaspoon salt
  • 1 1/2 cup milk
  • 5 eggs
  • 3 cans crushed pineapple
  • Whip cream

Procedure

  1. Make shell Pie Crust or Easy Pie Crust
  2. Separate egg whites from yolks
  3. Beat the egg yolks
  4. Mix in pot: sugar, corn starch, salt, 1/2 of the milk, egg yolks
  5. Cook mixture until thick
  6. Stiffly beat the egg whites
  7. Drain pineapples
  8. Remove from fire and add crushed pineapples, egg whites, remainder of milk
  9. Pour mixture into baked shell
  10. Chill then top with whip cream
