Pasta Primavera

Ingredients

  • Olive oil
  • Salt
  • Pepper
  • Fresh garlic - minced
  • Onion - 1/2 or whole - chopped
  • 1 (or 2) boxes frozen chopped spinach (defrost) or use fresh
  • Green zucchini - 2 - skin on - slice about 1/8 inch slices
  • Fresh tomatoes - 2 medium to large - (I skin) cube
  • Fresh basil (or dried)
  • Fresh parsley (or dried) fresh best
  • Fresh mushrooms - clean and slice thick slices
  • Red and / or green peppers - slice thin 1 inch strips
  • Jarred tomato pesto (unless you can make own)
  • Little wine

Procedure

  1. Oil to cover pan
  2. Saute garlic, onion, spinach - add wine
  3. Add tomato pesto sauce - about 2 cups - more or less - Add 2 to 4 cups tomato sauce - homemade or jar
  4. Bring to simmer
  5. Add all other vegetables, salt, pepper, if desired a little oregano, garlic powder, little hot sauce or red pepper if desired
  6. Add oil to taste
  7. Simmer until desired tenderness (better if not mushy) maybe 15 to 20 minutes
  8. While vegetables simmer - cook pasta - drain and add vegetables
  9. Serve with grated cheese
