Pecan Pie

Ingredients

  • 1/2 cup (1 stick) of butter
  • 1 cup sugar
  • 1 cup dark corn syrup
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon vanilla
  • 3 eggs
  • 2 cups coarsely chopped pacans
  • Fluted 9 or 10 inch unbaked shell

Procedure

  1. Allow butter to stand in bowl at room temperature until very soft
  2. Add sugar, syrup, salt, and vanilla
  3. With a hand rotary beater, beat until thoroughly blended
  4. Add eggs
  5. Beat until blended
  6. Add nuts
  7. Blend
  8. Pour into unbaked shell
  9. Bake at 375 degrees Fahrenheit until top is toasted brown and filling is set in center when gently shaken, about 40 to 50 minutes
  10. Chill and top with whipped cream

Notes for Pecan Pie

  • I use a 10 inch pyrex pie plate
  • I use Log Cabin syrup
  • Put butter in a large enough bowl to hold all the other ingredients
  • Put butter out an hour or two before. It should be real soft or it will be hard to blend smoothly
  • Of course you know the hand rotary beater is an egg beater
  • In my oven things burn at 375 so I cook it in a preheated oven at 350 for 50 minutes
