Lemon Icebox Cake

Ingredients

• One package lemon pie filling. Do not use the instant kind.
• 1/2 cup sugar
• 2 egg yokls - beaten
• 2 cups water
• 1/2 pint heavy cream - whipped
• 3 packs of lady fingers - can make angel food cake and slice

Procedure

1. Mix lemon pie filling, sugar, egg yolks, and water
2. Cook mixture until thick
3. Cool mixture
4. Line medium size oblong pyrex dish with lady fingers - Just the bottom
5. Top the lady fingers with half of the lemon mixture
6. Add another layer of lady fingers
7. Top with remainder of lemon mixture
8. Top with chopped nuts and refrigerate

I have not made this in quite some time, so I am not sure about how many packs of lady finges I used, it's either 2 or 3. Buy 3 to make sure, the children can eat the left overs.

To make the strawberry one , you use crushed sweetened fresh berries on top of the 2 layers of lady fingers and top each layer of fruit with whipped cream.
