Chicken and Dumplings

The dumplings for this recipe are made from page 267 Americana Cook Book. You'll need to make at least 2 batches of dumplings using that recipe.

Ingredients

  • 2 packages of chicken breasts
  • 2 medium to large onions
  • Sliced carrots
  • Potatoes
  • Chicken Bouillon cubes

Procedure

  1. Remove the skin and fat from chicken breasts
  2. Put chicken breasts into a very large pot and half fill it with water and bring to boil
  3. Add onions, carrots, potatoes, and bouillon cubes
  4. Simmer for about 2 hours
  5. Take out chicken
  6. Remove bones from chicken
  7. Cut up chicken meat and return to pot
  8. Taste for seasoning
  9. Make the dumplings
  10. Add dumplings to pot and cook
  11. Thicken juice as needed (with flour?)
